One of my simple joys is cooking. First on my blog is my favorite Mojos!
Yesterday, I was madly craving for mojos. Mojos is the crispy flavorful baked and fried potatoes in Shakey's. It comes with the familiar favorite Chick n' Chips and a family sized pizza. I didn't have any idea how to make one, but because the taste of it was very infectious to my buds, I kinda' created my own recipe similar to the original. Take note, I didn't search on the net. I just followed my wild instincts. So here's how I made my Mojos.
Ingredients
2 potatoes
2 cups of flour
2 tsp. black pepper
2 tsp. herbs (your choice, mine I used basil)
1 tsp. salt
1 tsp. Msg mix (your choice, mine I used ginisa mix)
Directions
Cut the potatoes into thin round slices
Boil the round sliced potatoes in hot water for 20 mins.
After boiling them, use paper towels to dry
Mix all the powdered-ingredients in a bowl
Dip potatoes into the mixture one-by-one to keep flavor
Store potatoes in wide pan separately, and put in the fridge for about 30 mins.
Deep fry the potatoes in the hot oil and serve with creamy mayo garlic dip
This mayo dip is very easy to make. I used mayonnaise and garlic ranch dressing and added basil herbs. It is a perfect dip than ketchup or mustard. Since, the Mojos has rich flavor already, dipping it in a soft creamy simple garlic sauce compliments the richness and crispiness of the potatoes.
But if you want to add other flavor to your taste buds, you can also add chicken fillet chips. The ingredients and directions are the same. Just dip them into the mixture you made with the potatoes, and store them in the fridge, then fry them. You don't need to boil the chicken before dipping them in the mixture as they get chewy and tough.
